I’ve got Berries coming out of my ears now that’s June! My dad has Raspberries and Blackberries, both coming ripe. Last week we picked a ton of Raspberries. Next will come the Blackberries.
I love the sweet treats that you can make with them, but my waistline is not so happy!
Here’s a great Breakfast Bar recipe that you can use with with pretty much any berry. I’ve done strawberry, raspberry and blackberry. Very good! I pulled this recipe out of a magazine and I’m not sure which one, but I’m glad I did.
Ingredients:
Crust and topping:
- 1 cup Flour
- 3/4 cup brown sugar
- 1/2 cup butter, cold and cut into small cubes
- 2 1/2 cups quick-oats
- 2 tablespoons apple or orange juice
Filling:
- 1/2 cup brown sugar
- 2 tablespoons flour pinch of salt
- 3 1/2 cups (18 oz) fresh berries
- 1 tablespoon lemon juice (I’ve left this out before and it turns out fine)
Heat oven to 375 degrees. Grease a 9×13 pan.
Add the flour and brown sugar to food processor and pulse to combine. Then add butter and pulse 5 or 6 times until coarse crumbs form. Add the oats and pulse 2-3 times more.
Remove 1 1/2 cups of the mixture and set aside. Add juice to remaining mixture and pulse until moistened. Press this mixture firmly and evenly into the bottom of the pan using the bottom of a measuring cup.
For the filling, whisk together the sugar, flour and pinch of salt in a bowl. Add the fruit and lemon juice and toss. Spread over the crust.
Sprinkle the reserved crumb mixture over the filling. Bake until the top is golden, about 35-40 minutes. Let cool on wire rack for about 2 hours. Then cut and store in the refrigerator.

I love raspberries!! I remember how I used to pick them in Vermont as a
child—they grew wild along the roads near our cabin and so did the
blueberries. I am gluten free now so I can’t make your recipe…..but I
can make a great smoothy!
